Pileci temeljac sa povrcem (Chicken stock with vegetables)

Sastojci: 1 batak sa karabatkom + 3 krilca, ½ glavice manjeg crnog luka, 2 šalot luka, zeleno bilje - 2 grancice lista timijana (svezeg), zeleni deo jednog praziluka, saka listova krbuljice (sveze) ili lista persuna (svezeg), 2 lista lovora (suvog), 2 stabljike celera, 2 šargarepe, 1 paškanat, 1 koren persuna, 2 L vode.

Priprema:

1. Svo povrće oprati, očistiti i/ili oljuštiti i iseckati na krupnije komade.

2. Zagrejati ulje i prodinstati povrće za temeljac, ne više od 2 min.

3. Dodati piletinu i sve zajedno dinstati još 2 minuta. 

4. Naliti vodom. Dodati zeleno bilje.

5. Kuvati temeljac maksimalno 35 minuta od trenutka ključanja, na srednjoj temperaturi (4) uz stalno uklanjanje nečistoća u vidu pene i masnoće sa površine temeljca.

6. Nakon 35 minuta, temeljac procediti.

7. Cuvati frižider do 3 dana ili zamrznuti.


Ingredients: 1 chicken drumstick whole + 3 wings, ½ head of small onion, 2 shallots, green herbs - 2 sprigs of thyme leaves (fresh), green part of one leek, handful chervil leaves(fresh) or parsley leaf (fresh), 2 bay leaves (dry), 2 stalks of celery, 2 carrots, 1 parsnip, 1 parsley root, 2 L of water.

Preparation:

1. Wash, clean and/or peel all vegetables and cut them into larger pieces.

2. Heat the oil and sauté the vegetables for the stock, no more than 2 min.

3. Add the chicken and simmer everything together for another 2 minutes.

4. Pour water. Add green herbs.

5. Boil the stock for a maximum of 35 minutes, medium heat (4) from the moment of boiling, while constantly removing impurities in the form of foam and fat from the surface of the stock.

6. After 35 minutes, strain the stock.

7. Store in the refrigerator for up to 3 days or freeze.
